تأثیر غلظت‌های مختلف دوپامین بر برخی خواص کیفی و بیوشیمیایی میوه گیلاس رقم تک‌دانه طی نگهداری در انبار سرد

چکیده

گیلاس (Prunus avium L.) به دلیل پوست نازک و سرعت تنفس بالا، از میوه‌های فسادپذیر در دوره پس از برداشت به شمار می‌آید. بهره‌گیری از ترکیبات زیست‌فعال طبیعی می‌تواند با کاهش ضایعات، افزایش عمر انبارمانی و حفظ ظرفیت آنتی‌اکسیدانی، کیفیت محصولات باغی را بهبود بخشد. در این پژوهش، اثر تیمار برون‌زای دوپامین بر برخی ویژگی‌های بیوشیمیایی و کیفی میوه گیلاس رقم «تک‌دانه» طی انبارمانی سرد بررسی شد. آزمایش به صورت فاکتوریل در قالب طرح کاملاً تصادفی با سه تکرار انجام شد. فاکتور اول شامل غلظت‌های مختلف دوپامین (0، 50، 100 و 200 میکرومولار) و فاکتور دوم مدت زمان انبارمانی (7، 14، 21 و 28 روز) بود. میوه‌های گیلاس پس از تیمار در سردخانه با شرایط دمای 0/5±1 درجه‌ی سانتی‌گراد و رطوبت نسبی 85 تا 90 درصد نگه‌داری شدند. نتایج نشان داد، دوپامین با کاهش سرعت تغییرات بیوشیمیایی (مانند افزایش pH، مواد جامد محلول کل و کربوهیدارت محلول کل) و با حفظ ترکیبات فنلی و رنگ پوست، روند پیری میوه را کند کرد. همچنین، افزایش فعالیت آنزیم‌های کلیدی مانند فنیل‌آلانین‌آمونیالیاز و کاهش فعالیت آنزیم پلی‌فنل‌اکسیداز در تیمارهای دوپامین منجر به بهبود کیفیت و ماندگاری میوه شد. این یافته ها بیانگر کارایی دوپامین به عنوان یک عامل طبیعی در حفظ کیفیت و افزایش ماندگاری پس از برداشت گیلاس است.
