تأثیر اسید سالیسیلیک و محلول فروت‌ست بر ویژگی‌های فیزیکوشیمیایی و کیفیت انباری میوه هلو رقم اسپرینگ

چکیده

هلو از میوه‌های با ارزش مناطق معتدله است که به‌صورت تازه‌خوری و فرآوری مصرف می‌شود. ترکیبات بیوشیمیایی این میوه تحت تأثیر شرایط اقلیمی، رقم و تیمارهای مختلف تغییر می‌کند. در این پژوهش، اثر دو تیمار اسیدسالیسیلیک (در چهار سطح صفر، 1، 2 و 3 میلی‌مولار) و محلول فروت‌ست (در دو سطح صفر و 3 در هزار) بر کیفیت میوه هلو رقم اسپرینگ بررسی شد. آزمایش در سال 1402 در باغی واقع در مشکین‌شهر و در قالب طرح بلوک کامل تصادفی با چهار تکرار اجرا گردید. محلول‌پاشی در سه مرحله پیش از تورم جوانه، اواسط گلدهی و تشکیل میوه انجام شد. پس از رسیدگی میوه‌ها، صفات فیزیکوشیمیایی آن‌ها ارزیابی گردید. همچنین برای بررسی کیفیت انباری، میوه‌ها در دمای 7 درجه سانتی‌گراد و رطوبت 60 درصد تا 20 روز نگهداری شدند. نتایج نشان داد تیمار اسیدسالیسیلیک در غلظت پایین و محلول فروت‌ست 3 در هزار باعث افزایش سفتی بافت میوه شد. تیمار 2 میلی‌مولار اسیدسالیسیلیک بیشترین وزن (307/8 گرم)، قطر (60/3 میلی‌متر)، قند کل (1/87 میلی‌گرم بر گرم) و فلاونوئید (1/83 میلی‌گرم بر گرم) را به همراه داشت. همچنین فعالیت آنزیم‌های آنتی‌اکسیدانی با افزایش غلظت اسیدسالیسیلیک افزایش یافت. در شرایط انباری، بیشتر صفات تا روز دهم روند افزایشی نشان دادند. تیمارهای اسیدسالیسیلیک و به‌ویژه فروت‌ست تأثیر مثبتی بر ویژگی‌های فیزیکوشیمیایی و ماندگاری میوه‌ها داشتند و قابلیت بررسی بیشتر در پژوهش‌های آتی را دارند.
